You know what quarantine has taught me? I don’t like to cook;) But I’m trying.
If you know me, you know I’m really not big on anything domestic…cooking, cleaning, laundry, etc. Sorry NOT sorry. I’ve noticed people are posting all of these amazing recipes and things like that…but…that’s never going to be me. SOOOOO. We can talk about what I HAVE been doing since the pandemic happened.
Being in this situation with my boyfriend, we felt like we had no choice but to start cooking more. We don’t live together, so when we did hang out, we’d often go out to eat or get delivery. Since this all happened, we’ve been together from the beginning…and trying to make the best eating habits as possible.
I’m going to be totally honest, the first few weeks were like “WTF”. Sometimes I’d be so lost in the day, I wouldn’t eat breakfast or lunch. We’d cook for dinner, and then get hungry again, so we’d order dessert for delivery. Last week, we realized we probably should start eating better so we feel better mentally and physically. I think we’re in a much better place now and continue to adapt!
(Just as an added tidbit, we go grocery shopping every 1.5/2ish weeks and we try to go around 9PM to limit the amount of people that are there.)
morning
I was never the “wake up and eat” kind of girl. Even when I was at the office, I’d be up for at least 3 hours before I ate breakfast. So now, I try to eat between 9:30 and 10AM. Most days, we switch between the following:
- A bowl of cereal (because sometimes you just really want a bowl of Honey Nut Cheerios)
- Scrambled eggs with swiss cheese, whole wheat toast, and thick cut bacon (or Canadian bacon)
- Smoothie – we usually use a combination of spinach, avocado, strawberries, blueberries, banana, cinnamon, yogurt, and coconut water
- Yogurt bowl – Greek yogurt (we love Trader Joe’s or Siggi), peanut butter, strawberries, banana, raspberries, and granola
- Cinnamon rolls (again, because sometimes you just really want them – it’s ok to be indulgent!!!)
lunch
Not gonna lie, we’ve been REAL bad with lunch. Sometimes skipping it all together because we let the day go by. A few weeks ago, I’d get by on hummus with pita or pretzels. Lately, we’ve been using Nick’s MealPal. If it’s available in your city, I HIGHLY recommend utilizing MealPal. You get INSANE discounts on lunch (and dinners, if you want to add that towards your monthly subscription)! Sometimes the meals we pick up would normally cost us $14-20 per meal. The meals are actually pretty decently portioned, so we split a meal for lunch.
With everything going on with Covid-19, they’re now doing MealPal Market – where you can get groceries from your favorite local restaurants. For example, one day we got DIG (formerly Dig Inn) for lunch, and Nick came back with a HUGE box of fresh produce. All for an additional $19.99! I love that they’re using this time to give customers access to produce and other essentials…and still supporting local businesses!
dinner
We’ve been doing A LOT of whole wheat pasta because it’s so easy to cook. Typically, we do it with chicken meatballs and red sauce. One night, we made meatloaf. Another night we marinated steaks in Italian dressing and made buffalo cauliflower. We’re getting a little tired of cooking, so we’ve been ordering from a local restaurant that is still open for take out and delivery to support. We’ve also been picking up dinner from MealPal restaurants.
snacks
Nick and I are BIGGGGGG snackers. Which really gets us into some trouble. We’ve been trying to be better though! So here’s some snacks we eat throughout the day:
- Hummus and pretzels
- Peanut butter and bananas/apples
- Laughing Cow cheese and pretzels
- Girl Scout Cookies……sorry not sorry
